Serving size: six appetizer size lettuce wraps
6 ounces ground bison
¼ cup diced white onion
3 garlic cloves minced
¼ cup diced sweet bell peppers
¼ cup diced white mushrooms
salt and freshly ground black pepper
6 cup size lettuce leaves
1 teaspoon dried or fresh thyme
1 teaspoon dried or fresh rosemary
2 tablespoons olive oil
In a large saute pan over medium high heat, heat olive oil. Add ground bison and all ingredients and seasonings to pan. Cook for approx. 15 minutes until meat is thoroughly cooked.
After meat mixture has cooled for approx ten minutes to avoid wilting lettuce leaves, spoon in approx one ounce into each leaf.
